They are healthy and full of Vitamin C and K and plenty of other nutrients.

They are part of the cruciferous vegetable family and look like tiny green cabbages. They are also incredibly an easy dinner side dish to prepare.

Oven Roasted Brussels Sprouts and Bacon


Ingredients

  • 4 cups Brussels sprouts stemmed and halved or quartered – depending on size
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons lemon juice
  • 4 slices bacon sliced in 1/4 inch pieces
  • 1/4 cup minced parsley optional garnish

Instructions

  1. Pre-heat oven to 400 degrees and line two baking sheets with foil.
  2. Add Brussels to a large bowl and toss with olive oil, salt and pepper.
  3. Spread in a single layer between both pans and roast until brown and caramelized, about 40 minutes, moving the Brussels around with a spatula once about halfway through.
  4. While the Brussels are roasting, sauté bacon slices in a frying pan until crispy.
  5. Reserve on a plate lined with paper towel.
  6. Remove roasted Brussels from the oven and place in a large serving platter.
  7. Sprinkle cooked bacon and lemon juice on top to serve.
  8. Garnish with fresh parsley.
