  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 4 Tablespoons cold butter
  • 1 cup cheddar cheese grated
  • 1 1/4 cup whole milk cold
  • 1/4 teaspoon garlic powder
  • To brush on top-
  • 2 Tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried parsley flakes
  • Salt to taste

  2. Preheat your oven to 400 degrees Fahrenheit.
  3. Using a fork or pastry cutter; combine baking mix and cold butter in a medium mixing bowl.
  4. Make sure not to mix it too thoroughly, allowing for small chunks of butter to remain in mixture.
  5. With your hands, mix in cheese, milk and garlic powder, until just combined.
  6. Drop portions onto an ungreased baking sheet, using a 1/4 cup measuring cup. Bake in pre-heated oven until golden brown, about 15 to 17 minutes.
  7. Remove the biscuits from the oven after they finish baking.
  8. Combine melted butter, garlic powder, parsley and salt in a small bowl.
  9. Using a kitchen brush, smear all of the garlic butter on top of the biscuits.

Ingredients

  • 2 tablespoons sugar
  • 2 1/4 teaspoons kosher salt
  • 1 (2 1/2-pound) boneless pork shoulder, trimmed
  • 1 tablespoon grated peeled fresh ginger
  • 2 tablespoons sherry or white wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted chicken stock
  • 1 tablespoon gochujang (Korean chile paste)
  • 1 1/2 teaspoons lower-sodium soy sauce
  • 1/4 cup thinly sliced green onions
  • 30 lettuce leaves (about 2 heads)

 

Directions:

 

Step 1

Combine sugar and salt in a small bowl. Place pork in a large bowl; rub evenly with sugar mixture.

Cover and refrigerate overnight.

Step 2

Preheat oven to 300°. Place pork on a rack set inside a roasting pan.

Place pan in oven; bake 4 hours or until a thermometer registers 210°, basting occasionally with drippings.

Remove from oven; let stand 30 minutes.

Shred pork with 2 forks

 

Step 3

Combine ginger and next 5 ingredients (through soy sauce), stirring with a whisk.

Stir in onions.

Reserve half of sauce.

Toss shredded pork in remaining half of sauce. Divide pork evenly among lettuce leaves.

    I eat a lot of chicken but sometimes it gets real boring making chicken the same way all the time.  I found this Bacon, Goat Cheese and basil Stuffed Chicken Breasts recipe.

     

    This stuffed chicken is easy to make.  You just butterfly your chicken breast, stuff with all your favorite ingredients fold,  secure with toothpicks and bake.

     

    Prep Time: 15 minutes
    Cook Time: 25-30 minutes
    Serves 4

    Bacon Goat Cheese Stuffed Chicken Breasts Ingredients:

    2 T. extra virgin olive oil

    4 6-oz. boneless, skinless chicken breasts

    4 oz. goat cheese, divided

    6 strips of cooked bacon, crispy and crumbled

    6 basil leaves, rolled and sliced thin

    Salt and pepper, to taste

    1 c. balsamic vinegar

     

    Bacon Goat Cheese Stuffed Chicken Breasts

    Bacon Goat Cheese Stuffed Chicken Breasts Instructions:

    Preheat oven to 375 degrees.

    Butterfly the chicken by running a sharp knife horizontally through the thickest part of each breast. Place one hand on top of the breast to stabilize while holding the knife parallel to the work surface while cutting. Do not cut all the way through. Open the breast so both halves can lie flat.

    Season the exposed surface with salt and pepper, then add 1/4 of the goat cheese, crumbled bacon, and sliced basil leaves to each breast.

    Fold the breasts in half so the cheese mixture is surrounded by chicken breast on the bottom, back and top. Secure with long wooden toothpicks, if desired.

     

     

     

    Heat olive oil over medium-high heat in a large oven-safe skillet. Once hot, add the stuffed chicken breasts to the pan to sear. Once browned on the bottom, carefully turn each breast over and repeat on the other side. Season top and bottom with salt and pepper, if desired, during this process.

    Place skillet in preheated oven and cook until an instant read thermometer reads 165 degrees when inserted, approximately 25-30 minutes. Remove from the oven and cover until ready to serve.

    A few minutes before removing the chicken from the oven, start making the balsamic glaze. Heat balsamic vinegar in a small sauce pan over medium-high heat. Stir while heating until the vinegar is reduced to about 1/3 of its original volume. It will form a thick, syrupy consistency when it is ready.

    To serve, place a stuffed chicken breast on each plate and drizzle with balsamic glaze. Pairs well with a mixed green salad or roasted vegetables.

    2. Remove from heat and transfer the dark cherry mixture to a blender or food processor and blend until smooth. Pour into a pitcher and let cool at room temperature for 10-15 minutes.
    3. Add lime juice and mint leaves and stir to combine. Place in the refrigerator until ready to serve.
    4. To serve, fill four serving glasses with ice and add ¼ cup dark cherry mixture, ½ cup club soda, and one ounce gin, if using, to each glass. Stir gently to combine and serve immediately. Enjoy!

    Tuscan Sausage and Potato Soup
    Ingredients
    • 4 oz. pancetta cubed
    • 2 lbs. bulk mild sausage
    • 2 15- oz. cans cannellini beans*
    • 6-7 c. chicken stock divided
    • 1 T. crushed red pepper flakes
    • 2-3 cloves fresh garlic finely minced
    • 1 small yellow onion finely chopped
    • 2 lbs. Russet potatoes peeled and cut into small chunks
    • 3 ” hard Parmesan cheese rind
    • Salt and black pepper to taste
    • ½ c. half and half tempered**
    • 3 c. fresh kale finely chopped
    • ½ c. Parmesan cheese freshly grated
    Instructions
    1. Brown pancetta in large skillet over medium-high heat for 2 or 3 minutes, stirring occasionally. Add sausage to the same skillet and brown, breaking it up into small bite-sized chunks with a spatula while it cooks. Remove from heat and carefully drain excess fat from pan. Transfer pancetta and sausage to a 5 or 6-quart slow cooker crock.
    2. Puree one can of cannellini beans (undrained) in a blender or food processor. Drain and rinse the other can of cannellini beans and add the puree and whole beans to slow cooker crock.
    3. Add 6 cups chicken stock, red pepper flakes, chopped onion, potatoes, and Parmesan cheese rind to crock and stir to combine. Season with salt and black pepper, to taste.
    4. Cover and cook on high for 3-4 hours or low for 6-7. Remove lid and add tempered half and half, kale, freshly grated Parmesan cheese and remaining

    Tips:

    For less salt, drain and rinse both cans of cannellini beans before pureeing one can with a little water.

    Temper the half and half by adding a little bit of the hot liquid to it before stirring it into the slow cooker crock.

    • 1 T. pumpkin pie spice
    • 16 oz. freshly brewed hot coffee
    • 8 oz. Irish Crème
    • additional pumpkin pie spice for garnish
    Instructions
    1. In a large glass bowl, blend 1 pint of heavy whipping cream with a hand mixer or immersion blender until it doubles in size and changes texture.
    2. Then, drizzle maple syrup into the bowl and continue blending until the mixture is light and fluffy.
    3. Set aside.
    4. Combine the pumpkin pie spice ingredients in a medium bowl and stir to combine. Set aside.
    5. Before brewing, sprinkle fresh coffee grounds with one tablespoon pumpkin pie spice and gently shake to evenly combine the mixture. Brew spiced coffee grounds as usual.
    6. Pour 2 oz. Irish Cream into each cup and top with 4 oz. of freshly brewed coffee.
