Deviled eggs are always a big hit around our house for summer bbq and always an appetizer at holiday get together time.

 

I ran across this recipe for Healthy Avocado Guacamole Deviled Eggs, and WOW.

Healthy Avocado Guacamole Deviled Eggs
 
Ingredients
  • 6 in hard boiled eggs cooled and sliced half
  • 2 extra large avocados or about 4 small avocados
  • Juice of 1 lime
  • ¼ teaspoon sea salt
  • ⅛ teaspoon chipotle pepper powder
  • 1 teaspoon finely chopped jalapeno peppers seeded
  • 1 tablespoon chopped cilantro
Instructions
  1. Scoop out the egg yolks, place in a mixing bowl, and set the whites aside
  2. Scoop out the avocados, add to the bowl and add the lime juice
  3. Mash until the mixture is fairly smooth
  4. Add the remaining ingredients, and mix well
  5. Fill the egg whites with the avocado mixture
  6. Top with additional chipotle powder and cilantro, if desired
  7. Refrigerate until ready to serve
